A New Seasonal Menu for the Colder Months
As the days grow shorter and the Lanes take on a quieter, wintry charm, we’re delighted to introduce our new Winter Menu at English’s of Brighton. Head Chef Yuri Magni has embraced the richness of the season, creating dishes that feel warming, thoughtful and full of depth, while still letting great ingredients speak for themselves.
Whether you’re stopping in for a long lunch, settling down for an evening meal, or escaping the cold with a glass of red and something comforting, our winter dishes are designed for slower moments and good conversation.
Seasonal Starters with Depth and Warmth
The winter menu opens with a selection of starters that balance comfort with creativity. Our Parsnip Éclairs are a standout, filled with smooth parsnip cream and finished with redcurrant gel, chestnut and sage, a dish that feels unmistakably seasonal and quietly indulgent.
For something heartier, the Venison Spring Roll brings together pak choi, pumpkin and shiitake mushrooms, served with a cranberry and ginger dip that adds warmth and gentle spice. It’s rich, satisfying and perfect for a cold day.
Seafood lovers will enjoy the Prawn Croquettes, crisp on the outside and soft within, served with tomato and guindillas, chilli chutney and lemon balm. Or opt for the Smoked Rainbow Trout, paired with coriander and pink peppercorn labneh, pomelo pearls and peanuts for a dish that feels fresh yet comforting.


Mains Made for Winter Dining
A staff favourite on the menu is our French Trimmed Pork Chop, cooked with care and served with a classic peppercorn sauce. It’s a robust, deeply satisfying main that suits the season perfectly.
Alongside, you’ll find thoughtfully prepared sides such as Samphire with coriander and pink peppercorn labneh, offering a lighter, coastal note to balance richer plates.
As always, our commitment to seafood remains central, with seasonal fish and carefully sourced ingredients prepared simply and well.
Sweet Finishes for Cold Days
Winter calls for proper puddings, and this menu delivers. The Dark Chocolate Marquise is rich and indulgent, served with pistachio and a sharp kumquat compote to cut through the sweetness.
For something lighter, the Almond Madeleine comes with lemon curd, Italian meringue, raspberry and thyme, elegant and fragrant. And for those who want a true classic, our Sticky Toffee Pudding with butterscotch sauce and vanilla ice cream is as comforting as it gets.
