Wine pairings: Paupiettes of lemon sole

In the fifth chapter of our wine pairings series, we’re serving up a plate of lemon sole with crab & spinach and potato rösti, in a white wine sauce.

The dish
A great choice for winter, this dish enjoys plenty of comforting, warming ingredients, like a hearty slab of potato rösti, and a nod to spring thanks to the crab & spinach stuffing. A perfect balance of the seasons. The rich white wine sauce calls for, of course, a pleasantly dry white wine, and one with subtle notes of peach.

The wine
Specialising in its only product, Verdicchio, Angelo Accadia began making wine in 1983 and now yields a limited run of each wine. Harvested by hand, followed by a soft pressing, the grapes are handled carefully and with gentle consideration. In this medium-bodied wine you’ll find seductive notes of lychee, honey-suckle, peach, almonds and spearmint filling the nose. It’s not too dry, and ranked highly in its round of wine tasting at English’s.
